To Make The Hot Honey Simple Syrup
In a small saucepan, combine honey, water, and jalapeños. (To make this mixture more mild, remove seeds).
Bring the mixture to a boil, stirring frequently.
Turn the heat off and steep the mixture for 5 minutes.
Strain hot honey mixture using a fine mesh strainer. Set aside.
To Make The Hot Honey Mojito Mocktails (Individually)
In a rocks glass, muddle 5-6 mint leaves (this will extract oils from the mint that will flavor your drink).
Fill the glass with ice. (I like a lot of ice.)
Pour 1.5 ounces of hot honey simple syrup into the glass. You may increase or reduce the amount of simple syrup based on how spicy you want it.
Pour 1 ounce of lime juice into the glass.
Fill the glass the rest of the way with club soda (about 3 ounces). Garnish with mint and sliced jalapeños and enjoy!
